Candy School 2025 Enrollment and Waitlist
Candy School is our most popular course, offering an in-depth, 2-week exploration of all candy types and common industry challenges. We recommend this course for scientists, as it delves into the technical details of candy chemistry and physiology. Taught by industry experts, the course covers a broad range of topics, including colors, flavors, hard and soft panning, chocolate panning, polishing, fondants, oils and emulsifiers, caramel, fudge, toffee, chocolate and compounds, and candy bars. The course includes numerous hands-on labs and tastings to complement the lectures. The 2025 Candy School will run from July 21-August 1.
