Candy Basics 2026
Candy Basics is a condensed 1-week version of our 2-week resident Candy School. It covers most of the same topics but in less depth and with fewer hands-on labs. This course is typically recommended for industry professionals on the business side, as it requires less technical knowledge and background in food science. However, R&D scientists have also taken this course and found it very beneficial. It's an excellent option for those who can't commit to the full 2-week resident Candy School. This course covers a wide range of topics taught by industry experts, including sweetener basics, hard candy, colors and flavors, gummies, jellies, licorice, aerated confections, soft and hard panning, tablet polishing, gum, caramel, fudge, toffee, fondants, creams, and candy bars. The 2026 Candy Basics course will run from March 28 - April 5.
